Black beans? Black beans. Flourless, super duper easy and so, so delicious. Top them with mocha frosting for an extra awesome treat 🙂 This recipe is suitable for gluten free & lactose intolerant diets.
Ingredients:
- 540ml / 19 fl oz can of black beans, drained and rinsed well
- 3 eggs
- 1/3 cup of coconut oil
- 1/2 cup ‘Very Dark’ maple syrup (or honey)
- 1 tablespoon vanilla extract
- 1/3 cup cocoa/cacao powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- chopped walnuts (optional)
Directions:
- Preheat oven to 180C / 350F
- Grease a 22cm / 9″ inch square pan. Line with parchment paper.
- Place all the ingredients in a blender or food processor and blend until it is all liquid with no lumps, then fold in walnuts
- Pour into the pan and bake in oven for 25-30 minutes or until a toothpick inserted in the centre comes out clean. Mine takes approx 27 minutes. It can look a little soft in the centre, that’s fine so long as the toothpick is clean. Over-baking will result in a crumbly brownie
- Cool for 10 minutes then remove from pan and cool completely
- Cover and refrigerate over night. In my opinion they taste best when allowed to warm to room temperature 👍
- Extra delicious with mocha buttercream frosting 🙂
