This recipe can be a bit of work, but the payoff is a batch of really delicious cookies that’ll shoot your glucose levels to the moon.
(quantities are for a double batch)
INGREDIENTS
- ~226 grams softened butter (2 sticks)
- 2 cups brown sugar
- 1 cup smooth peanut butter
- 2 eggs
- 4 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 2 tsp baking soda
- 2 tsp cornstarch
- ½ tsp baking powder
- ½ tsp salt
- 3 cups oats
- 2 cups semi-sweet chocolate chips
- 1 cup M&M candies
METHOD
- Preheat oven to 350F (180C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the butter, brown sugar and peanut butter with a hand mixer until light and fluffy. Mix in the egg and vanilla.
- In a separate bowl, add the flour, baking soda, cornstarch, baking powder, and salt and mix well.
- With the mixer on low, slowly add the flour mixture to the wet ingredients and mix until just combined. Stir in the oats, chocolate chips and M&Ms by hand.
- Using a ¼ cup measure, scoop out a ball of dough and place it onto the baking sheet. Flatten the cookie to about a ½ inch thickness.
- Bake the cookies for 11-13 minutes until the edges are just starting to brown and the top looks slightly under-cooked.
- Remove from the oven and allow to cool.
- Store extra cookies in a large Tupperware in the fridge.
