This recipe can be a bit of work, but the payoff is a batch of really delicious cookies that’ll shoot your glucose levels to the moon.

(quantities are for a double batch)

INGREDIENTS

  • ~226 grams softened butter (2 sticks)
  • 2 cups brown sugar
  • 1 cup smooth peanut butter
  • 2 eggs
  • 4 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 2 tsp baking soda
  • 2 tsp cornstarch
  • ½ tsp baking powder
  • ½ tsp salt
  • 3 cups oats
  • 2 cups semi-sweet chocolate chips
  • 1 cup M&M candies

METHOD

  1. Preheat oven to 350F (180C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar and peanut butter with a hand mixer until light and fluffy. Mix in the egg and vanilla.
  3. In a separate bowl, add the flour, baking soda, cornstarch, baking powder, and salt and mix well.
  4. With the mixer on low, slowly add the flour mixture to the wet ingredients and mix until just combined. Stir in the oats, chocolate chips and M&Ms by hand.
  5. Using a ¼ cup measure, scoop out a ball of dough and place it onto the baking sheet. Flatten the cookie to about a ½ inch thickness.
  6. Bake the cookies for 11-13 minutes until the edges are just starting to brown and the top looks slightly under-cooked.
  7. Remove from the oven and allow to cool.
  8. Store extra cookies in a large Tupperware in the fridge.
