Hummus is really easy to make. no excuses on buying it at the store any more!
INGREDIENTS
- 1 can of chickpeas (drained, rinsed)
- 1-2 heads of roasted garlic
- ½ cup tahini
- ¼ – ½ cup lemon juice (to preference)
- ¼ cup warm water
- ¼ cup olive oil
- 1 tsp salt
- 1 tsp cumin powder
- ground pepper to taste
METHOD
- Preheat oven to 350F (180C)
- Cut the top off a whole head of garlic (about half a centimeter). Wrap in foil, drizzle with olive oil and crack some salt and pepper on top. Close the aluminium up and roast in the oven for 50-60 minutes. Remove from the oven and allow to cool.
- Squeeze the garlic cloves out into a bowl and put everything else in with it. Blend with immersion blender.
- It takes a while, make sure there aren’t lumpy bits or whole chickpeas left. Keep blending until it is creamy.
- If the hummus is too thick, add a little more water, a bit at a time – it’s easier to thin it out than it is to thicken it up again.
- You may find after a few days of storage the hummus has thickened – just add a bit of water and mix it through.
