Sambal is a kind of spicy pickle jam, served with most Indonesian meals. There are so many different types of sambal, but this one is Sambal Terasi (Shrimp Paste Sambal). This kind of sambal can be stored for a long time if kept in a small jar in the fridge.

INGREDIENTS:

  • ~20 bird’s eye chillies (You’ll need 3 tablespoons of whatever chillies you want to use)
  • 1/2 onion, grated
  • 3 teaspoons salt
  • 3 teaspoons terasi (shrimp paste)
  • juice of 1/2 lemon
  • 2 tablespoons oil


METHOD:

  1. De-seed and mince the chillies
  2. Heat oil in pan
  3. Fry all the ingredients until soft and well blended
  4. You may want to add the lemon juice towards the end of the frying process so as to not lose the flavour
