While sugar-free treats are never quite as good as their sugary counterparts, these will satisfy a sweet craving… if you can control yourself!
Makes 10 – 20
Ingredients
- 3 egg whites
- Half vanilla pod, beans scraped out (or 1/2 teaspoon sugar free vanilla extract)
- 1 cup shredded coconut
- 1/2 cup almond flour
- 1/4 teaspoon sea salt
- 1/2 teaspoon Stevia (mine is 90% stevioside)
- 1/2 teaspoon cinnamon (or more to taste)
Method
- Preheat oven to 180°
- In a large bowl, whip egg whites and vanilla until thick, and soft peaks form
- In a separate bowl, mix coconut, almond flour, stevia & salt and combine well
- Fold the dry ingredients into the egg and vanilla mixture
- Let mixture sit for 5 minutes
- Meanwhile, prepare baking tray with a sheet of baking paper
- Teaspoon mixture (around 2 tsp. per cookie) onto baking paper
- Bake for 10 – 15 minutes, or until lightly golden
Store macaroons in an air tight container, with baking paper between each layer. Will store in freezer or fridge for a few weeks.
