While sugar-free treats are never quite as good as their sugary counterparts, these will satisfy a sweet craving… if you can control yourself!

Makes 10 – 20

Ingredients

  • 3 egg whites
  • Half vanilla pod, beans scraped out (or 1/2 teaspoon sugar free vanilla extract)
  • 1 cup shredded coconut
  • 1/2 cup almond flour
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon Stevia (mine is 90% stevioside)
  • 1/2 teaspoon cinnamon (or more to taste)


Method

  1. Preheat oven to 180°
  2. In a large bowl, whip egg whites and vanilla until thick, and soft peaks form
  3. In a separate bowl, mix coconut, almond flour, stevia & salt and combine well
  4. Fold the dry ingredients into the egg and vanilla mixture
  5. Let mixture sit for 5 minutes
  6. Meanwhile, prepare baking tray with a sheet of baking paper
  7. Teaspoon mixture (around 2 tsp. per cookie) onto baking paper
  8. Bake for 10 – 15 minutes, or until lightly golden

Store macaroons in an air tight container, with baking paper between each layer. Will store in freezer or fridge for a few weeks.
