INGREDIENTS
•1 package extra firm tofu
•1 small onion (any type), chopped
•2-4 cloves garlic, diced
•1 package OR 1 big handful of mushrooms, any type, cleaned and thoroughly dried then roughly chopped
•1/2 package of Daiya cheese, any flavour (I usually use cheddar for this, but the mozzarella tastes good too)
•(optional) field roast, other veggies you want to use up such as kale, zucchini, carrots, etc. This is super versatile so you can add a lot of different things depending on what you have on hand.
-Seasonings-
These amounts are all estimates since I usually just eyeball everything, so feel free to tweak it to suit your tastes
•3 T Nutritional Yeast
•1/2 T turmeric
•1/2 T cumin
•1 tsp cayenne powder
•salt & pepper to taste. Probably needs more salt than you think it will. I also like to top mine with smoked salt, in which case i would salt the scramble less. This is also good with a pinch of black salt added for that eggy flavour, same with MSG.
-Toppings-
•fresh chopped tomatoes/cherry tomatoes
•fresh cilantro or parsley-
INSTRUCTIONS
Drain the tofu, then wrap it in a dish towel and set something HEAVY on top to further drain it for at least 30 minutes (I usually use a baking tray or pot with some canned goods in it).
While the tofu is draining, prep your veggies. Heat oil in a large pot over medium-high heat. Throw in onions, cook for a couple minutes til they start to look translucent, then add mushrooms and garlic (and field roast if you're using it).Cook for a few more minutes until garlic is no longer raw. It's okay if things start looking a little crispy at this stage, it's unlikely you'll overcook them. Add in any other veggies you want at this stage as well (except Kale or other leafy greens, they go in just before the cheese).
Crumble the tofu off the block with your hands until it looks the right size/texture.Push all the veggies to half of the pan. Add a small bit more oil if needed, then put in the tofu. Season the tofu side and stir it to get the seasonings incorporated. Cook for a couple minutes, then stir the tofu and veggies all together. Taste and adjust seasonings as needed
Throw in 1/2 to 1 whole package of daiya cheese and stir. When it's all melted, it's ready to serve! Top with tomatoes and cilantro. Great served with sourdough toast or oven-roasted potatoes (the frozen ones are great if making them on your own seems daunting!)
