Easy marinated ramen eggs

Ingredients:

  • 2-3 large eggs
  • 1/8 cup soy sauce
  • 1/8 cup mirin
  • 1 cup dashi
  • green onions (optional)

you can make vegetarian dashi with konbu and shiitake, I use a scant 1/4 tsp HonDashi powder
an optional tip is to pierce the “bottom” of the egg with a drawing pin so the eggs fill the air pocket and don’t come out with a flat end, but this is purely aesthetic and not necessary

Directions:

  • bring a pot of water to a boil, make sure there’s enough to cover the eggs by about an inch
  • add the eggs and boil for 7 minutes
  • remove eggs and place immediately in an ice water bath
  • add the ingredients to a pot and bring to a boil before turning off the heat and allowing to cool
  • peel the eggs and place in a container with the marinade
  • place in fridge for at least 24 hours, 48 hours best
