Easy marinated ramen eggs
Ingredients:
- 2-3 large eggs
- 1/8 cup soy sauce
- 1/8 cup mirin
- 1 cup dashi
- green onions (optional)
you can make vegetarian dashi with konbu and shiitake, I use a scant 1/4 tsp HonDashi powder
an optional tip is to pierce the “bottom” of the egg with a drawing pin so the eggs fill the air pocket and don’t come out with a flat end, but this is purely aesthetic and not necessary
Directions:
- bring a pot of water to a boil, make sure there’s enough to cover the eggs by about an inch
- add the eggs and boil for 7 minutes
- remove eggs and place immediately in an ice water bath
- add the ingredients to a pot and bring to a boil before turning off the heat and allowing to cool
- peel the eggs and place in a container with the marinade
- place in fridge for at least 24 hours, 48 hours best
