A comforting, sweet, baked dessert. One of my favourites.

(Serve warm OR cold, but not hot)

Ingredients

  • 4 eggs
  • 2 cups milk (coconut milk is good too)
  • 1/2 cup plain flour
  • 1 cup sugar
  • 125g butter, melted
  • 1/4 tsp salt
  • 1 cup shredded or desiccated coconut
  • 1/2 tsp vanilla essence (unless you use vanilla coconut milk)

Method

  1. Mix all ingredients together. (I mix the flour with a little of the milk first, until it’s a smooth paste, to make sure it doesn’t go lumpy in the mixture).
  2. Pour into a greased flan or quiche dish.
  3. Bake at 180C (355F) for about an hour, or until just golden and custard just set. Don’t overcook!!
