A comforting, sweet, baked dessert. One of my favourites.
(Serve warm OR cold, but not hot)
Ingredients
- 4 eggs
- 2 cups milk (coconut milk is good too)
- 1/2 cup plain flour
- 1 cup sugar
- 125g butter, melted
- 1/4 tsp salt
- 1 cup shredded or desiccated coconut
- 1/2 tsp vanilla essence (unless you use vanilla coconut milk)
Method
- Mix all ingredients together. (I mix the flour with a little of the milk first, until it’s a smooth paste, to make sure it doesn’t go lumpy in the mixture).
- Pour into a greased flan or quiche dish.
- Bake at 180C (355F) for about an hour, or until just golden and custard just set. Don’t overcook!!
