These apple muffins are best served fresh and warm, or warmed up in the microwave. They are dense, but full of great stuff. Better to be eaten within 3 days, as they tend to dry out and become a little hard.
Makes 12
Ingredients
- 1 large egg
- 2 tbsp of veg oil
- 1 medium-large granny smith apple, diced
- 1 cup water
- 1 and 1/2 cups whole wheat flour
- 1/3 cup of rolled wholegrain oats
- 3/4 tsp baking powder
- 2 tsp baking soda
- 1/4 tsp sea salt
- 1/2 tsp Nutmeg
- 2 tsp Cinnamon
- 3/4 cup of Sultanas
- 1/2 cup of Walnuts, roughly chopped (I keep 12 aside to stick on top)
- 1/2 tsp Stevia (90% Stevioside) (optional)
Method
- Beat egg and oil together
- Add the dry ingredients and mix
- Add cup of water. Beat until smooth.
- Add apple pieces and mix
- If mixture is too dry, add more water slowly (don’t make the mixture too thin)
- Spoon into muffin tin
- Sprinkle top with extra oats, place a walnut on the top
- Cook at 190° for 20-25 mins
Best eaten once they’ve cooled out of the oven, but still warm… awesome!
