These apple muffins are best served fresh and warm, or warmed up in the microwave. They are dense, but full of great stuff. Better to be eaten within 3 days, as they tend to dry out and become a little hard.

Makes 12

Ingredients

  • 1 large egg
  • 2 tbsp of veg oil
  • 1 medium-large granny smith apple, diced
  • 1 cup water
  • 1 and 1/2 cups whole wheat flour
  • 1/3 cup of rolled wholegrain oats
  • 3/4 tsp baking powder
  • 2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 tsp Nutmeg
  • 2 tsp Cinnamon
  • 3/4 cup of Sultanas
  • 1/2 cup of Walnuts, roughly chopped (I keep 12 aside to stick on top)
  • 1/2 tsp Stevia (90% Stevioside) (optional)

Method

  1. Beat egg and oil together
  2. Add the dry ingredients and mix
  3. Add cup of water. Beat until smooth.
  4. Add apple pieces and mix
  5. If mixture is too dry, add more water slowly (don’t make the mixture too thin)
  6. Spoon into muffin tin
  7. Sprinkle top with extra oats, place a walnut on the top
  8. Cook at 190° for 20-25 mins

Best eaten once they’ve cooled out of the oven, but still warm… awesome!
