I’ve had a wicked craving for apple cakes lately, and after trying two recipes that absolutely failed (I call them Crapplecakes) I enlisted the help Bee who lives over at Honey Jumble.
INGREDIENTS:
- 2 cooking apples (I use Granny Smith)
- 1 cup self-raising flour (or make you own using 1 cup plain spelt flour sifted with 2 tsp baking powder)
- 125g butter
- 1/2 cup sugar (or equivalent stevia; I use 1/2 teaspoon of 80% stevioside powder)
- 2 beaten eggs
- cinnamon
METHOD:
- Preheat oven to 180°C
- Peel, core and chop apples into small pieces.
- Sift flour into a bowl, rub in butter to breadcrumb consistency.
- Mix in sugar, apple pieces and eggs. Stir well.
- Put into a greased 5cm x 20cm cake tin.
- Sprinkle with cinnamon (and sugar if using).
- Bake in oven for 35 minutes.
- Serve while hot as a dessert or cold as a cake.
