This was a quick made-up dish when there was pretty much nothing left in the house. I grabbed what I had, banged it into a pot and it turned out pretty good, if not a little spicy! The sauce was great drizzled over rice.
Ingredients
You can use pretty much anything, this is just the list of things I had in the cupboard.
- 2 potatoes, diced ~2cm pieces
- 2 carrots, roughly sliced
- 1 large onion, diced
- 4 cloves of garlic (crushed or minced)
- 1/3 cup of water
- 1/2 cup of soy sauce
- 1 tsp fresh ginger, finely chopped
- 1/2 teaspoon chilli powder
- 1 1/2 tablespoon sugar (optional)
Method
- In a large pot, brown onion and garlic in a bit of oil
- Add vegetables and briefly fry
- Add water, soy and other ingredients
- Bring to boil
- Turn down to low
- Cook with lid on for 45 mins (or until meat cooked/veg tender)
- Serve with rice
Works well with chicken thighs, briefly friend to seal before adding vegetables. May want to use less soy, depending on taste.
